SPRING

Did I mention it is spring here?
I went to the kite festival on Saturday (pictures to come later) and
we stopped by to check out the blossoms.
They are not in full bloom yet, but will be very soon.
I can't wait! I love this time of year!

Green Month



I love March because everything starts to turn green again.
It is the new shade of green with a yellow hint to it.
I have been working on a colors project for some personal work.
I will post a couple pictures this month from my green series.

Tasty Fish?

I don't really care for fish - I don't really like the smell or when it tastes "fishy."
But I was feeling brave on Valentines Day and decided to make
something I have never made before ... and that was fish!
And guess what? I make great fish! Not too fishy and lots of flavor!
I love it when people share their amazing recipe finds with me, so I am sharing this one.
I got the recipe from allrecipes.com and made the suggested changes.
Enjoy!
Baked Halibut Steaks
Serves-4 | Prep Time-15 min. | Cook Time-15 min.

Ingredients:
  • 1 tsp olive oil
  • 1 cup diced zucchini
  • 1/2 cup minced onion
  • 1 clove garlic, peeled and minced
  • 2 cups diced fresh tomatoes
  • 2 Tbs chopped fresh basil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 (6 oz) Halibut steaks
  • 1/3 cup crumbled feta cheese
Directions:
1. Marinate Halibut steaks for about 1 hour in Italian Dressing.
2. Preheat oven to 450 degrees. Lightly grease a shallow baking dish.
3. Heat olive oil in a medium saucepan over medium high heat and stir in zucchini, onion, and garlic. Cook and stir 5 minutes or until tender. Remove saucepan from heat and mix in tomatoes, basil, salt, and pepper.
4. Arrange Halibut steaks in a single layer in the prepared baking dish. Spoon equal amounts of the zucchini mixture over each steak. Top with feta cheese. (I used garlic and herb feta cheese).
5. Bake 15 minutes in the preheated oven or until fish is easily flaked with a fork. (Cover the fish loosely with tin foil for first 8 minutes to keep the feta from browning too much)
**Using fresh ingredients makes a big difference in the taste!

We also sautéed button mushrooms as a side to our fish dish!

One more note - I got my fish from Trader Joes - they have freeze dried halibut.

Inspiration Give Away Winners

I will share a few of my inspirations.

In no particular order:

The changing of the season is always a great inspiration to me.
The leaves that change the most beautiful shades of colors - I love it.

Another thing that inspires me is the LDS Temple. These are two pictures of the DC Temple.
I am a member of the Church of Jesus Christ of Latter Day Saints.
My beliefs are the basis of so much of my inspiration.



Snow in the spring.
I am one of those crazy people who really likes the snow.
Especially when it comes as a surprise and coats the fresh green spring leaves.
